- Dear distinguished guests, organizers, and all friends who support plant-based living,
Hello everyone.
I am Isabella Tsao , chef and co-founder of Green Monday Vegan Bakery in Taiwan.
Standing here today, I want to express my heartfelt gratitude to the Asia Vegan Awards for this recognition, to my amazing team who has walked alongside me through every step, and to every customer who has stepped into our bakery and been willing to try vegan desserts. Because of them, this honor truly has meaning.
For the past twelve years, I have chosen to use desserts to speak for the animals, especially for the mother animals overlooked in the livestock industry. To me, dessert is more than a delight for the taste buds—it is a gentle yet powerful force. It can touch people’s hearts and help them understand that our food choices can also be acts of compassion, protecting both life and the Earth.
Someone once said that we have three chances every day to save the world through our meals. But I believe dessert offers a fourth chance—a chance filled with joy, love, and kindness.
In recent years, beyond publishing cookbooks and launching online courses, I’ve also shared our exclusive plant-based baking techniques—developed over many years—with the large bakery chain Ichinoya, helping them convert all their products to 100% vegan. Through this collaboration, we hope that vegan desserts will no longer be a niche choice, but something that can enter more households and become part of everyone’s daily life.
Finally, I want to pay my deepest respect to the organizers and to all the pioneers promoting plant-based lifestyles. On this path, we may have felt lonely or faced doubts, but because of your companionship, I believe our collective compassion can become a powerful force for changing the future.

- 各位貴賓、主辦單位，以及所有支持純植物飲食的朋友們，大家好。
我是曹思蓓，臺灣「綠帶純植物烘焙」的主廚與共同創辦人。
今天能夠站在這裡，要感謝 Asia Vegan Awards 的肯定，感謝我的團隊夥伴一路與我並肩前行，也感謝每一位願意走進店裡、願意嘗試純素甜點的客人。因為有他們，這份榮耀才有了真正的意義。
十二年來，我選擇用甜點來為動物發聲，特別是那些畜牧業裡被忽視的動物母親。對我來說，甜點不僅是味覺的享受，更是一種溫柔的力量。它能觸動人心，讓人願意理解：飲食的選擇，也能成為守護生命與地球的行動。
有人說，我們每天有三次機會透過飲食來拯救世界。而我相信，甜點能帶來第四次機會—— 是一次帶著喜悅、愛與慈悲的選擇。
近年來，除了出版食譜與線上課程，更將研發多年的獨家的技術分享給大型烘焙連鎖企業『一之軒』，協助他們把商品100%轉為純素食，期望透過更大的生產能量，讓純素甜點不再只是小眾的選擇，而是走進更多家庭、成為每個人日常生活的一部分。
最後，我要向主辦單位，以及所有在推廣純植物飲食路上的同行者，獻上最深的敬意。在這條路上，我們可能都曾感到孤單、也曾背負質疑，但因為有你們的同行，我相信我們的利他善念可以凝聚成為改變未來的強大力量。

- ご来賓の皆さま、日本プラントベース市場協会の皆さま、そして純植物の食を応援してくださるすべての方々、こんにちは。
私は台湾「綠帶純植物烘焙（Greenbelt Vegan Bakery）」のシェフであり、共同創業者の曹思蓓(Isabella Tsao)です。
本日この場に立つことができたのは、Asia Vegan Awards のご評価、そして共に歩んでくれたチームの仲間たち、さらに店に足を運び、純植物のスイーツを試してくださったお客様のおかげです。皆さまのお力添えがあってこそ、この栄誉は本当の意味を持ちます。
この12年間、私はスイーツを通して動物たち、とりわけ畜産業の中で見過ごされがちな母親たちの声を代弁してきました。私にとってスイーツは味覚の楽しみだけでなく、心に触れ、人を動かす「やさしい力」です。それは、人々に「食の選択が、命と地球を守る行動になり得る」という理解をもたらすものだと思っています。
「人は毎日3回、食事を通じて世界を救うチャンスがある」と言われますが、私はスイーツが「第4のチャンス」を与えてくれると信じています――それは喜びと愛、そして慈悲に満ちた選択です。
。近年はレシピ本の出版やオンライン講座に加え、長年研究してきた独自の技術を大手ベーカリーチェーン「一之軒」に提供し、彼らの商品を100％ヴィーガン化するお手伝いをしました。より大きな生産力を通じて、純植物のスイーツを小さなコミュニティにとどめず、より多くの家庭に届け、日常の一部として根付かせたいと願っています。
最後に、日本プラントベース市場協会の皆さま、そして純植物の食を広める道を共に歩んでこられた仲間の皆さまへ、心からの敬意を表します。この道のりで孤独や疑問にさらされたこともありましたが、皆さまと共に進んでこられたからこそ、私たちの「他者を思う優しさ」が未来を変える大きな力となると信じています。
